"Castilla's GOLD: the pine nut with a unique taste"


Whether salty or sweet, there are many ways in which pine nuts can appear in our kitchen and cooking with nuts and mixing textures is very fashionable. You will love our recipes:


( for 4 people )


  • 200 gr. long grain rice
  • 2 tablespoons pine nuts
  • 1 small can of mushroom
  • 3 ripe tomatoes

For the souce:

  • 5 tablespoons of oil
  • 2 tablespoons vinegar
  • small onion
  • red bell pepper
  • 1 green pepper
  • salt and a pinch of ground pepper
  • a few sprigs of parsley


Put a liter of water with a teaspoon of salt in a saucepan over the fire. When it is boiling, add the rice, stir and cook over medium heat for 12 to 15 min.

Taste some grains to verify doneness. Transfer to a colander, put under the cold tap water, rince quickly, drain and put it in a glass salad bowl. Stir it with a fork so that it does not cake.

Prepare the sauce with the aforementioned ingredients, cutting the onion and peppers into very small pieces. Mix the rice.

Wash and cut the tomatoes into wedges. Chop the murshrooms.

Mix with the rice, add the pine nuts and sprinkle with the finely chopped parsley.

  • 300 gr. spaghetti

  • 1 large bunch of fresh basil

  • 50 gr. peeled walnuts

  • 50 gr. peeled pine nuts

  • 50 gr. fresh cheese

  • 50 gr. butter

  • 1 envelope of Parmesan-style cheese

  • 1 clove garlic

  • 4 tablespoons oil

  • salt and black pepper 


Wash the basil, dry it and carve it. Chop the peeled garlic, walnuts and pine nuts often.

Mix the fresh cheese with the Parmesan, butter and oil in the blender. Add the basil and garlic, chopped walnuts and pine nuts and beat for a few minutes until obtaining a homogeneous sauce with the consistency of a cream. Season it with salt and pepper.

Cook the spaghetti in plenty of salted water and a few drops of oil for 6 – 8 minutes (depending on the brand). Drain them, put them in a large bowl and mix them with the sauce. Serve them immediately.

  • 4 beef steaks well stretched

  • 4 slices of cured ham

  • 4 slices of fatty cheese

  • 2 tablespoons pine nuts

  • 30 gr. grated cheese

  • olive oil, salt and pepper

  • ¼ l. white wine

  • 2 tablespoons fried tomato

  • parsley

  • ½ kg. mashed potato


Spread and season the beef steaks and top with the cheese slices. Chop the ham and mix it with half of pine nuts, the grated cheese and parsley. Put it on top of the beef steaks, roll them up and prick them with toothpicks or tie them with a string.

Fry the meat in oil over low heat, 3 or 4 minutes, so they are well done inside and not burnt. Once fried remove strings and reserve.

In the same pan, but leaving a little oil, add the white wine, the tomato and the rest of pine nuts. Cook until the sauce thickens a little.

Serve the beef steaks in pieces, sauce and accompany them with mashed potatoes, garnished with a drizzle of crude oil.

  • 250 gr. pine nuts

  • 250 gr. raw almonds

  • 350 gr. sugar

  • 5 whole eggs

  • 3 yolks

  • 100 gr. candied fruit

  • 100 gr. flour

  • 100 gr. butter

  • 3 egg whites.


Almonds are finely crushed and mixed with the sugar. After add the 5 whole eggs and the 3 yolks, and continue mixing for a while. Apart the 100 gr of candied fruit chopped into small pieces and marinated in advance with liquor (rum or cognac) are mixed with the flour.

This mixture is incorporated into the eggs mixture, it is mixed well, the 100 gr of melted butter are added and finally the 3 egg whites without beating. A mold is greased with butter, in sufficient quantity so pine nuts stick together covering the whole mold.

The dough is ppoured over them and cooked in a medium oven for 45 minutes. It is convenient to put it in the oven right away so egg whites do not drop.
